Sourced from the Mandhelingo region in the highlands of Sulawesi, this coffee showcases traditional farming methods and unique processing techniques that result in the distinctive characteristics of Indonesian coffee. Local smallholder farms utilize time-honored cultivation practices in volcanic soils, producing beans with the full body and earthy complexity that define premium Indonesian coffee.
Altitude & Processing: 1,200-1,600 MASL (meters above sea level)
Utilizing the semi-washed processing method, typical of Indonesian coffees, enhances the natural body and earthy characteristics. The beans undergo partial fermentation and controlled drying, developing their distinctive full-bodied profile. We apply the Swiss Water Process for decaffeination, which removes 99.9% of caffeine while preserving the coffee's natural flavors and qualities, resulting in a richly flavored decaf experience.
Blend Composition: Java Toraja
This blend features Java Toraja, a premium Indonesian varietal known for its exceptional body, low acidity, and complex earthy characteristics. This heritage cultivar thrives in Sulawesi's volcanic soils and high-altitude conditions, producing beans with distinctive herbal and chocolate notes. Its natural resilience and unique flavor profile make it ideal for decaffeination, maintaining its characteristic Indonesian complexity and full body throughout the process.
